Another Costco Business special. I bought a 25 lb case of Roma tomatoes and a pound of cilantro and then adapted this recipe to help use them up.
Ingredients
- Dressing
- 2 tablespoons extra virgin olive oil
- 2 tablespoons rice vinegar
- 2 teaspoons sugar
- 2 teaspoons reduced sodium soy sauce
- 1.5 teaspoons oyster sauce
- 3 tablespoons julienned fresh ginger
- 1 clove garlic, minced
- Nori sesame salt
- 2 nori sheets
- 1.5 tablespoons toasted sesame seeds
- 0.25 teaspoons kosher salt
- Salad
- 2 lbs Roma tomatoes (cut into chunks)
- 1 lb watermelon (cubed, roughly the same size as the tomato chunks)
- 3 scallions (chopped)
- 1 cup cilantro (coarsely chopped)
Instructions
- Whisk the olive oil, vinegar, sugar, soy sauce, and oyster sauce together. Stir in the ginger and garlic, set aside.
- Tear nori sheets into smaller pieces and pulse in a small food processor to turn it into a coarse powder. Stir in toasted sesame seeds and salt.
- Combine tomatoes, watermelon, scallions, and cilantro in a bowl. Pour dressing over salad and stir to combine.
- Just before serving, top with the nori sesame salt.
Notes
- This recipe is crammed full of flavor. Olive oil, rice vinegar, soy sauce, ginger, garlic, oyster sauce, nori, sesame, tomato, cilantro, scallion – each ingredient packs a punch. They all work together and it tastes great, but think of this more like a tasting menu dish – have a small amount and leave yourself wanting more.
- The original recipe calls for plums instead of watermelon. Substitute 5 large plums for the watermelon. It also tastes good, shown below.
